Shosui-San took over from his father after college in 1985. Takeda-San's knives are incredibly thin, focusing his attention on Aogami Super he was able to perfect his technique. He uses pre laminated Stainless clad AS for the NAS line. He says why forge weld myself when a steel factory has perfected it why chance de-lamination or other issues with forge welding in house.
If you like Hyper cars then a Takeda Nas is a must have. The Sasanoha is very similar to a Gyuto in shape. You will find Takeda-San's Gyutos to have a very flat profile while the Sasanoha has more profile.
