Tsunehisa knives are made incredibly well and very affordable. The Migaki line are pretty thin, not quite a laser though. They have are great profile for cutters who rock or push cut. These knives have stainless cladding so they have less maintenance. The Wendge and Maple burl handle is a real eye catcher.
