Yoshida Hamono is Located in the Saga Prefecture. After world war 2 they invested in modern machinery to start creating kitchen knives. When they found ZDP189 they were blown away by the edge retention and how sharp it gets, even though its much harder to work with the other steels. ZDP189 needs a very certain temperature range when forge welding and quenching.
We only have one of these knives and are looking into carrying more.
